Cornbread

Great for cookouts. I like this recipe: https://kennethtemple.com/moist-southern-cornbread-recipe/#%f0%9f%93%96-recipe , but I half the sugar , add copious corn kernels, and substitute buttermilk for a mixture of sour cream, yogurt, water, and milk

  • 24 oz corn flour

  • 6 oz flour

  • 2 teaspoon baking soda

  • 2 teaspoon baking powder

  • 2 cup sugar

  • 2 teaspoon salt

  • 4 eggs beaten

  • 4 tablespoons unsalted butter, melted

  • 4 oz sour cream

  • 2 oz yogurt

  • 10 oz water

  • Milk, to get constancy batter-like

  • 1 cup frozen corn kernels

  1. Mix dry ingredients.

  2. Melt butter, then beat with egg.

  3. Add rest of wet ingredients to wet mixture, except milk.

  4. Mix wet with dry, then add milk until consistency turns thick batter-like.

  5. Mix in corn kernels.

  6. Pour batter in buttered/oiled container with parchment paper lining.

  7. Bake at 425 degrees for around 25 minutes, or until toothpick comes out clean.
