Jicama salad
I’d been eating raw jicama, and Mummy came to add some civilization to the preparation. Adapted from here.
Ingridients:
1 jicama, cut into matchsticks
lemon juice from 1 lemon
Lemon zest from 1 lemon
2 tablespoons mayonaise
1 tablespoon maple syrup
2 tablespoons olive oil
Fresh ground black pepper
Half an onion, chopped very small
thick chopped herb, I have tried both cilantro and mint
thin-sliced red cabbage (optional), around 1/2 cup
raisins (optional)
Worshechire sauce (optional)
Procedure
Blanche jicama
Mix onions and lemon juice in large bowl, with a little salt.
Mix in lemon zest, mayonaise, maple syrup, olive oil, and worshteshire sauce (if using). Mix well to emulsify.
Toss in all other ingridients
