Jicama salad

I’d been eating raw jicama, and Mummy came to add some civilization to the preparation. Adapted from here.


Ingridients:

  • 1 jicama, cut into matchsticks

  • lemon juice from 1 lemon

  • Lemon zest from 1 lemon

  • 2 tablespoons mayonaise

  • 1 tablespoon maple syrup

  • 2 tablespoons olive oil

  • Fresh ground black pepper

  • Half an onion, chopped very small

  • thick chopped herb, I have tried both cilantro and mint

  • thin-sliced red cabbage (optional), around 1/2 cup

  • raisins (optional)

  • Worshechire sauce (optional)

Procedure

  • Blanche jicama

  • Mix onions and lemon juice in large bowl, with a little salt.

  • Mix in lemon zest, mayonaise, maple syrup, olive oil, and worshteshire sauce (if using). Mix well to emulsify.

  • Toss in all other ingridients
