Mayo Dill Roasted Chicken

Inspired by Kenji Lopez-Alt’s recipe, this was a big hit with the fam. First brine the chicken with salt and vinegar, then slather with a mayo mix. I added my excess green goddess dressing in too, as well as tons of fresh chopped dill. Green goddess dressing recipe is here

Secret ingredient:

Heavy on mayo (otherwise sauce may not stick)

Timed cooking in airfryer (roast at 375F) and cook to internal temperature of 145F

Will need to shield chicken with foil toward second half of cooking in s

Spatch-cocked chicken (1/2 spatchcock chicken for airfryer)

Salt brine with 3-4 tsp salt and a bit vingar (or add vinegar to dressing)
